Halloween is over and time has turned back. We all know what that means: Cooler weather, darker nights.
Here to save the season is this homemade turkey stew, meant to warm you up! This is a recipe my mom has made for me time and time again, and it is always a win. Seriously. #WinnerWinnerTurkeyDinner!
What you’ll need:
- 1 smoked turkey thigh, cubed
- 1 cup of water
- 1/3 of a green, yellow and red pepper, sliced
- 1 small tomato
- 1 small onion
- 1 teaspoon of paprika
- 1 tbsp of all-purpose seasoning
- 1 tsp of black pepper
- Salt to taste
- Optional: 12 oz can of red kidney beans
- Optional: hot pepper flakes
What to do:
Step one: Over high heat, bring turkey meat and water to a boil in a large pot. You can choose to add the kidney beans here!
Step two: Stir in peppers, onion and tomato. Simmer on medium for five minutes or until veggies are tender. Add the hot pepper flakes here if spicy food is your thing!
Step three: Mix in paprika, all-purpose seasoning, salt and black pepper.
Step four: Reduce heat and let pot simmer for 15-minutes.
A very simple, full flavoured meal just like mom makes. You can even eat this stew on a bed of steamed rice. Mmmm!
