This dish is an important tradition in my boyfriend’s family and because I am (almost) family, I was given the honour of trying out the recipe and sharing it with you all!
Here’s how to make the best (no bake) sweet cherry squares ever.
What you’ll need:
- 1 cup of brown sugar, lightly packed
- 1/2 cup of butter
- 1/2 cup of milk
- 1 cup of graham cracker crumbs
- 1 cup of chopped walnuts
- 1 cup of desiccated coconut
- 8 maraschino cherries, chopped
- 18 whole graham crackers (or more)
- 8 inch square cake pan
Icing
- 2 tbsp of butter
- 1 cup of icing sugar
- 1 tbsp of milk
- 1/2 tsp of vanilla
What to do:
Step one: In a saucepan over medium heat stir together butter, sugar and milk. Bring contents to a boiling point and remove from heat.
Step two: Add in graham cracker crumbs, nuts and coconut. Mix together well.
Step three: Arrange nine graham crackers to cover bottom of eight inch cake pan.
Step four: Pour mixture over and top with remaining nine crackers. Press down slightly.
Step five: Blend together icing ingredients thoroughly and spread over top layer of graham crackers, evenly.
Step six: Place in the fridge to firm up a bit. Then cut into squares.
Tip: Not enough icing? Try doubling or tripling the ingredients to add extra sweetness.
Super simple! This is a great treat to have for any occasion especially if you have a sweet tooth like me. And, these sweet cherry squares keep really well the freezer.
